Zucchini Pesto Pasta

I got a spiralizer for a wedding gift and put off using it because every time I went to make pasta it seemed time consuming. I could not have been more wrong - the zucchini pasta is quick, easy and great because it just tastes like whatever sauce you pair it with!


  • 4_Zucchini
  • 1_Red bell pepper
  • 1_Yellow bell pepper
  • 1_Green bell pepper
  • 4_Chicken tenderloins
  • Pesto sauce

Step 1//

Start grilling your chicken first, I really like to use infused olive oils so for this recipe I used Benissimo Naturals Basil & Sundried Tomato olive oil to cook the chicken in. 

Step 2//

Cut up your veggies, I used about 1/2 to 3/4 of each pepper and bagged the excess. Once you have done that you can spiral cut your zuchinni, I used a spiralizer which makes it super easy! Don't forget to always wash all of your veggies, even organic to remove dirt, bacteria, pesticides etc. 

Step 3//

There are a lot of ways to cook zucchini pasta, but I steamed mine and really liked how they turned out. It only takes about 4 or 5 minutes and you can test them to get it to the consistency you like. A little dash of salt and you can strain them some for excess water and you're good to go. Once you start steaming your pasta, turn your chicken and throw in the veggies! I try out all different kinds of pesto sauces, this time I used Bear Pond Farm tomato basil pesto which is certified gluten free and made with non gmo ingredients.

Toss it all together and you've got a delicious, quick and healthy meal! As always I can't help but to toss a little parmesan cheese on top.
